Egg Replacers: As Leavening Agents

The following instrutions are the amount for the substitution of
1 egg
for leavening
(see other "recipes" for eggs as binders and
for moisture)
Egg-Replacer by Ener-G isa potato starch and tapoica flour based egg-replacer good for rising.
1 1/2 teaspoons Egg Replacer powder mixed in 2 tablespoons water.
Special Diet Solutions suggestions 2-3 times as much powder for best
results.
For added lightness, whikp in food processoror blender
for 30 seconds.
Baking soda and Vinegar
1 1/2 TBL water
1 1/2 TBL oil
1 tsp baking soda
1/2 tsp vinegar (optional, for more rising-power)
Whisk above ingredients together in a cup and pour into mixture that calls for an egg.
Note: this only works as a substitute in baking items like cakes, muffins,
etc.- things that need to rise.
It gives the chemical components needed for rising, but no flavor
whatsoever. It would not work in a cheesecake because you need the egg
yolk/flavor for that.
